The Canteen Supervisor (Administrative Assistant III) performs professional administrative duties, food handling and food preparation tasks. The Canteen Supervisor is tasked to oversee the daily operations of the Nifty-Fifty Canteen, a short-order restaurant located on the campus of the Austin State Hospital. The Canteen Supervisor's responsibilities include, but are not limited to: food handling and preparation; supervision of canteen staff; training; ordering, receiving, and stocking of merchandise; production and distribution of food served, daily and monthly inventories of stock; reconciliation of purchases, cash handling and sales of merchandise; daily reports and monthly inventories.
Ensures that the Canteen meets all obligations related to client incentive programs.Ensures that the Canteen, restrooms, adjacent conference rooms and all equipment are routinely serviced. Performs employee evaluating and counseling, as required. Works with Financial Services staff to establish and/or renew food service contracts.
Works under direct supervision of the Financial Services Office, with considerable latitude for the exercise of independent judgment. Interacts with other Austin State Hospital staff in a positive and professional manner. Essential Job Functions:
Supervise the daily operations of the Nifty Fifty, a short-order canteen/restaurant.Ensures that safe food handling practices/procedures are maintained at all times. Ensures the production and distribution of food served at the Canteen, producing the recipes and production orders for the Canteen staff, and oversees the quality of the food.
Ensures the canteen facility is cleaned daily and operates within all state and local health code requirements. Ensures employees engaged in serving food maintain cleanliness of food service areas and equipment. Trains workers in performance of related duties.
Assigns and coordinates work of employees to promote efficiency of operations. Inspects kitchen and dining areas and kitchen equipment to ensure sanitary standards are met. Keeps records, such as amount and cost of meals served and hours worked by employees.
Requisitions and/or purchases food, drinks and other related items. Active participant in the hiring process for Canteen employees. Knowledge Skills Abilities:
Knowledge of safe food handling/food preparation procedures in a restaurant environment, local laws/regulations related to restaurant operations and point of sale operations and general storefront operations. Knowledge of methods, materials, equipment, and appliances used in quantity food preparation and service; of food storage and preservation.Skill in the operation, cleaning and sanitizing of food service appliances and equipment.Skill in cash handling and cash register reconciliations Ability to calculate food requirements; to maintain accurate records and inventories; to prepare food service budgets and requisitions; and to plan, assign, and/or supervise the work of others.Registration or Licensure

Support and shadow sales personnel

Maintain tools, equipment and work areas in a clean and orderly condition. Utilize portable meters, analyzers and equipment to conduct tests and monitoring. Operate oil filtering equipment. Erect and remove simple scaffolding and rigging. Perform routine cleaning of plant areas and equipment, including outside areas, as assigned.
Load, unload, move and handle materials, supplies and equipment; open boxes, barrels, bags and other materials using material handling equipment.
Monitor water chemistry as required. Maintain water pH and follow EPA guidelines as applicable.
Assist in preparing boilers and auxiliaries for operation and removal from service. If applicable, monitor coal feed to mills and burners and observe conditions of fires and furnaces. Hand lance slag in boilers, hand- operating soot blowers, unplugging ash lines, disposing of clinkers and other similar work.
Use flow diagrams to identify system piping and equipment and revise these prints as required. Make required equipment checks and assist in performing tests and preparing related reports, graphs and curves. Perform duties in accordance with Company's safety rules, operating regulations and practices and report unsafe conditions and practices.
Train for and carry out assignments in firefighting, first aid and other emergency response programs as required. Perform other job duties as assigned.
