Prepare, fill and maintain barrels/foeders
Conduct barrel/foeder transfers, blending and fruiting
Sensory evaluation and record-keeping
CIP fermentation vessels, BBTs, transfer lines, etc
Sanitary transfers and centrifuge operation
Monitor and document tank temperatures, pressures, beer gravity and pH
QC/QA protocols in the cellar. Strict adherence to QA/QC documentation
SOP creation and follow-through
Safe forklift operation

Desired Qualifications and Abilities:
Minimum of two-year experience as a Cellar Person at a medium sized production brewery or packaging brewpub
Experience producing mixed fermentation and barrel aged beers
In depth knowledge and understanding of sour beer production
Formal brewing education preferred but not required
Sufficient computer literacy, writing and math skills necessary to accurately document data collection worksheets
Ability to lift large, heavy items
Ability to stand for prolonged amount of time
Forklift experience preferred (Trillium Brewing will provide training)
Ability to safely handle hazardous chemicals in accordance with strict safety protocols

The Cellar Operator is responsible for all aspects of cellar work, filtration and centrifuging of product as specified by Harpoons Standard Operating Procedures.
Ability to perform all cellar operations including the start-up and shutdown of facility processes
Cleaning and sanitizing of filtration equipment and lines (CIP, CUP, BB tanks, lines and yeast brinks)
Performing routine readings
Maintaining accurate daily records
Maintaining all levels within product specifications
Monitoring quality parameters
Participating in taste panel work
Daily operation of filtration equipment and procedures
Attending weekly department meetings as scheduling allows

Wine Cellar Distribution Clerk
Fulfill all wine orders to the various restaurants on property on a daily basis. Work closely with the Wine Cellar Supervisor to maintain stock levels both in the Wine Cellar and in the "wine by the glass" room. In addition, this position will work as needed in the purchasing warehouse assisting the purchasing and logistics department with their day to day duties.
Fill and post wine requisitions
Assist Wine Cellar Supervisor in completing monthly inventories
Assist Wine Cellar Supervisor in completing weekly "spot-checks" on inventory
Stock wine in restaurants throughout property
Assist with setting up and breaking down wine tastings
Stock and replenish wine cellar on a daily basis
Maintain cleanliness of the wine cellar
Pick up weekly wine/liquor order from the liquor store
Assist the purchasing department with deliveries, re-stocking and month end inventories when needed
- Assist in controlling/eliminating shrink, performing month end inventories and reducing/eliminating out of stock situations. Responsible for picking up all wine/liquor from the liquor store, restocking the wine cellar with the assistance of the Wine Cellar Supervisor, Director of Purchasing and Assistant Food and Beverage Director and delivering all wine requisitions to each restaurant outlet. Will also assist the purchasing department when needed.

Under moderate supervision, performs basic, routine Cellar and Barrel Room tasks including but not limited to: cleaning and sanitizing Cellar fittings, hoses, fixed process lines, tanks, barrels, and grape and wine processing equipment.
Wine movements – set-up and movement of wine and juice to and from tanks, barrels and tanker trucks.
Make additions to wine and juice after a confirmation of the calculations by a Cellar Supervisor or Manager.
Operate pumps, plate and frame filters, hoists, and other Cellar equipment.
Understand and be an active participant in the 7S program. (Sort, Set in order, Standardize, Sweep, Sustain, Safety, and Stop).
Measure and calculate routine workplace data.

The O'Berry Neuro Medical Treatment Center in Goldsboro, North Carolina provides services through two distinct healthcare programs: Skilled nursing facility services (OBRA) and Developmental Disabilities (ICF-IID). The Food Production Supervisor supervises inmate workers to ensure that meal and food items are prepared in accordance with production plans. Trains workers in methods of performing duties and assigns/coordinates work to promote efficiency of operations, along with sanitation of the facility and maintaining personal safety.
