Serve as the Assistant Store Director, responsible for all store administration functions, fully sharing the overall management, direction and control of the commissary
Analyze a variety of management reports to determine efficiency of operations and to recommend or implement changes
Develop budget estimates & monitor program obligations and expense targets
Act as store sanitation coordinator; establish controls for prevention of pilferage and ensures that sanitation, safety and security precautions are observed.
Responsible for all personnel functions within the commissary, such as staffing, recruitment and the development of performance standards. Promotes DeCA goals and objectives of the EEO and Affirmative Action Program
Represent the commissary at a variety of commander's meetings, such as the Commissary Advisory Council and Base Civil Engineering meetings

Prepares and serves branded products according to brand specification following specified recipes and portion control.
Assembles products to service, including front-line finish product cooking.
Assists cook and senior food-service worker.
Operates induction burners, ovens, grills, fryers, mechanical cutting equipment, mixers and other manual kitchen utensils.
Completes food production records.
Prepares items on the grill, in the pizza oven and exhibition style.
Completes daily, weekly and monthly cleaning.
Serves customers in an efficient, friendly manner, resolving concerns when necessary.
Interacts with coworkers to ensure compliance with company service standards, and inventory and cash-control procedures.

Title of Position- Commissary Executive Chef
Job Description: Our Commissary Executive Chef will be responsible for the overall direction, coordination, and financial results of our food service team. He/She will train & manage culinary personnel along with supervising and coordinating all related culinary activities. This individual will establish performance goals and coach/motivate their staff to help unlock their potential and reach company goals. The Commissary Executive Chef will also oversee forecasting of events, including planning around holidays that may have potential to impact business. This includes adjusting recipes based on seasons and our customers’ tastes evolving. The ability to be hands-on with hiring, training, and developing our culinary team is a vital part of the Commissary Executive Chef role. This person will ensure our kitchens are meeting Federal, State, and Local health, food safety, and sanitation laws.
- Minimum of 5-7 years of current Executive Chef experience; Multi-Unit Chef experience with retail background a huge plus
- High volume production and catering experience is required for this position
- A stable work history; no more than two jobs in the previous five years
- Demonstrated experience with recipe, menu, and pricing development of meals
- A thorough understanding of prepared retail foods and decomposition
- Hands-on with hiring, training, and developing Back of the House staff
- Outstanding work ethic and drive to succeed
- Strong leadership, communication, and organizational skills
- Ability to maintain high levels of food quality, hygiene, and consistency
- Proficiency with automated reporting systems including, but not limited to, inventory, food cost, scheduling, time and attendance, gross margin and labor
