The Specialty Cook is responsible for the preparation of all wok-cooked or sautéed items along with the
preparation required in setting up the stations for the branded concepts for each shift. The Specialty Cook
supports a team environment and is responsible for communicating any potential problems to the manager on
duty, providing the highest level of service to customers and associates at all times, and performing all additional
responsibilities as directed by assigned management. This is a non-exempt position, which reports to the Store
Manager, Assistant Store Manager or Operations Director, depending upon local requirements.
Follows recipes and/or product directions for preparing and wok-cooking all specified menu items; works
with a sense of urgency to meet time goals while adhering to recipe standards, and displays an attention
to detail and food presentation
Follows recipes and/or product directions for preparing, cutting, marinating, cooking, tasting, carving and
serving all items
Tastes products, follows menus, estimates food requirements, checks production and keeps records in
order to accurately plan production requirements and requisition supplies and equipment as needed
Performs basic math and measurement calculations associated with recipes
Operates kitchen equipment (i.e., buffalo chopper, fryers, cleavers, etc.); handles knives and wears a cut
glove when doing so regardless of knife size
Coordinates food output with the other cooks
Maintains quality control for all products, including monitoring freshness of product
Cleans and sanitizes work stations and equipment
Follows excellent food safety and sanitation practices and complies with HACCP standards
Stocks, dates, rotates and checks temperature of product; receives, moves and lifts food and beverage
products and supplies
Complies with HMSHost and franchise policies as well as those of all applicable regulatory agencies
Minimum Qualifications, Knowledge, Skills, and Work Environment:
Requires 1-2 years of wok-cooking experience where food is prepared to order (including ability to work
two  woks simultaneously preferred); if no previous wok experience, requires a minimum of 1-2 years of
sauté experience and/or cooking experience in a high volume and high prep dining kitchen.
Successful completion of brand training program
Requires food preparation skills and knowledge of HACCP standards
Requires the ability to speak, read and comprehend instructions, short correspondence and policy
documents, as well as converse comfortably and professionally with individuals
Requires the ability to work in varied kitchen temperatures, up to and including very warm cooking
Must be able to cook, stand and/or walk for period of up to nine  hours

Specialty Line Cook Michele's Kitchen
Prepares quality food products in a timely manner and attractively presented in accordance with our standard recipes and plating instructions.
Assists the Sous Chef with the training of line cooks and with the preparation of:
Weekly work schedules and daily break schedules for the pantry staff
Daily food production schedule (conforming to cover forecast) and work assignments
Storeroom requisitions to maintain par levels
Ensures that all kitchen staff works in a sanitary, safe and productive manner.
Portions and prepares food items such as soups, sauces, entrée items and vegetables in accordance with printed orders and plating instructions, avoids waste in preparation.
Ensures that all food going out on the service line is excellent regarding preparation, taste and presentation.
Ensures that all kitchen work stations and storage areas are always kept clean and in good condition.
Carries a calibrated thermometer to be able to check prepared food for proper and safe temperature.
Uses protective gloves when preparing food.
Follows the instructions of management.
Handles pressure during peak hours.
Provides exceptional customer service.
Works safely, following all established safety rules and regulations.

Properly and safely uses and cleans all kitchen equipment.
Runs a kitchen line efficiently following point of sale tickets and banquet event orders while serving quality food.
Helps create and execute daily and weekly menu items for the Community Table Bistro.
Prepares recipes as directed following use records and or instructions.
Makes sandwiches, soups, salads, entrees, etc. Wrap, box, present as needed following POS, BEO’s, instructions.
Receives deliveries and stores food in refrigerators and freezers in a timely and neat manner.
Rotates stock in containers to maintain freshness.
Makes lists of items that need to be ordered and assists in keeping the kitchen organized.
Complies with special food handling requirements for certain dishes such as vegan or gluten-free.
Assists in cleaning the kitchen before closing for the night.
Fills in busing tables and catering assistance when needed.
Follows food handler instructions and ServSafe rules and regulations.
Cleans food preparation areas throughout the course of the entire day.

Under general supervision, prepares large quantities of a variety of food including meats, fish, poultry, gravies, cereals, soups, vegetables and other foods. Uses various methods of cooking and seasoning and adheres to proper preparations methods. A wide degree of creativity and latitude is expected.
This role provides meal preparation for both Denver area facilities ; Williams Street and Tooley Hall and will be responsible for the transportation of the meals from Tooley Hall to Williams Street using a company vehicle.
The shift schedule is as follows
Either 7 AM or 8 AM to 5 PM or 6 PM (five days per week). This may include a weekend schedule.
This is a full time position with benefits and PTO. Wages are $17.35 per hour.
Primary Duties and Responsibilities
Cooks food as directed in the operational menu plan for the facility food service operation. Ensures recipes are extended to the facility population requirements. Maintains accurate production records.
Directs work, provides training and performs inspections of work performed by detainee food service staff.
Conducts orientation and training programs for staff employees.
Responsible for preparation scheduling and the quality assurance of all foods and supplies.
Responsible for placing orders for food and supplies as assigned by management. Checks in deliveries and takes inventory of food and supplies as required.
Ensures the sanitation and safety program is actively practiced in all areas of the department.
Assists management in maintaining a high-level of good client relations.
Performs other duties as assigned.
High school diploma or equivalent certification required.
College credits or relevant technical training courses in food service preparation and cooking preferred. Prior cooking and correctional food service training preferred.
Minimum one (1) prior experience in successfully managing and/or quantity food production experience in commercial, military, school or institutional setting or an equivalent combination of work experience and training required.
Must be able to communicate to all personnel the minimum production/service requirements of the job.
Valid driver's license.
