Responsible for scale dough accurately and according to the production schedule. Runs dough through the bread divider at the proper rate and weight. Keeps the Mixer Operator and Foreperson notified of any irregularities in the schedule or dough; adjusts the flour sifters' overhead proffer speed and moulder functions; monitors the proof box controls; places racks in the proof box and keeps the area as clean and neat as is possible.
ESSENTIAL DUTIES AND RESPONSIBILITIES INCLUDE:
Responsible for the correct and safe operation of the bread divider
Set divider speed as specified on the production schedule for each variety. Do not run the divider at speeds different than standard unless otherwise directed by the foreperson or supervisor. Utilize the clock for timing units per minute each day.
Be responsible for empty racks being pulled close to Moulder Operator and for their being placed in the correct proof box slot.
Record the time on rack tickets and place on the first rack of each variety before, loading into the proof box. All racks with product will have a numbered rack ticket
Push racks of bread into the proof box, filling one stall at a time
Check divider weights every 5 minutes or often enough to maintains best quality specifications
Set scaling weight adjustments as specified for each variety on the production schedule.
Check the weight throughout the dough. Notify the Foreperson or Supervisor if problems occur with scaling.
Do not divide dough out of sequence from the production schedule unless directed by the Foreperson or Supervisor.
Assist the dough Mixer Operator in pulling full dough troughs to the bread divider hoist.
Make sure sifters (divider, rounder, intermediate proffer) are full of flour and or cornstarch.
Keep containers covered at all times
Record the start and stop times for each variety.
Record scaling weight checks on check sheets.
Assist the Moulder Operator in changeovers as time allows.
Immediately notify the Foreperson or Supervisor if production is stopped for more than five minutes, if proof box temperature or humidity varies, if proper floor time cannot be kept, if any dough does not run properly or does not feel right
Keep accurate accountability on slips provided.
Assist in solving the problem if for any reason the Moulder Operator stop production
Have an explanation for all lost time (moulder stickup, mix late, machine malfunction, etc.).
At the end of each variety:
Scale all doubles and assist the moulder operator in running them.
Clean dough reservoir and divider hopper of dough
Adjust divider weight, sifters, sifters, and speed for the next variety.
Count the number of total units ran and records the number on, the last rack ticket, the production schedule, the accountability card.
Notify the foreperson if the count varies more than 25 units on the 2# varieties, or more than 50 units on all other varieties.
Lightly grease the divider hopper for the next dough.
Clean dough out from the back or the divider plate and ram.
Assist the moulder operator in the preparing for the next variety.
Never place hands into hopper while divider is running.
Do not try to pick dough out from behind the head while the divider is running.
Do not put hands into sifters. If they are plugged up, vacuum excess flour out.
Before running the trough hoist up or down, make certain the area beneath and around the hoist is dear.
Stop the divider before adjusting "Squirrel Cage".
Go up and down the steps to the dough hopper with caution.
Keep hands out from between moving racks.
Keep oil cleaned off floors.
Do not carry anything in shirt pockets.
Inform Foreperson or Supervisors when you find a rack, which is hard to move. If you have to lift dough, cut small pieces.
Verify operation conditions (performance, temperature, and times) are correct during the process.
Communicate with foreperson to assure that product is being baked correctly and, if not, communicate with supervisor to make the needed adjustments
Check that product maintains best quality specifications
Keep the mixing area clean and organized during operations and at the end of the shift in sanitary conditions
Clean dough leakage from rain and knife in rear and from behind and below division box.
Scrape divider belt as required. Oil divider head, ram and knife as needed.
Oil dough into divider hopper as needed or required.
Dust off equipment with foxtail brush as needed.
Perform sanitation duties and other duties as directed by the foreperson. Do not leave work station at the end of your shift until the area is clean
Notify maintenance department and supervisor of any mechanical problems as needed (verbally and in writing)
EQUIPMENT AND TOOLS REQUIRED:
Knows the safe operation of the bread divider.
Ability to follow the order sheets and the proper scaling of the product.
