To greet every guest arriving in our restaurant, as well as controlling and directing the flow of seating. When you are on a wait, you will have three hostess functions that need to be performed:
The GREETER meets the guest at the front door, takes the name, hands our pagers, and quotes the wait time.
The LEADER plans which tables should be seated, when tables are turning and calculates wait time. This function can be performed by the floor manager.
The SEATER literally takes the party to the table, hands out menus and can also be used as a busser.

GRILL POSITION: grilled sandwiches, burgers, ribs, feathers, quesadillas and platters. It is essential that this person is organized and focused.
There are a number of toppings and marinades that the grill man must add per order. At any given time there could be 15 to 20 items on th grill that must be cooked to varying levels of doneness.
APP POSITION: responsible for all fried appetizers, certain wraps as well as French Fries. This is an important position because a lot of the items this position prepares will be appetizers that need to be prepared quickly as not to delay the rest of the ticket.
Since French Fries are severed with most sandwiches this makes for a very busy station. The app man must be able to cook several things at once.
MARINADE POSITION: dip wings in specific marinades according to order and puts them in the oven. Must be organized, able to count and be familiar with marinades by sight.
This position calls for a quick, disciplined cook. By knowing the marinades by sight and putting correct amount of marinade on the wing, he can keep the flow of your most popular item going at the correct pace and save food by eliminating waste.
MIDDLE POSITION: is your kitchen expeditor. He removed the cooked wings from the oven and assembles wing platters according to order.
In order to control the flow of the food from the kitchen, he must direct all positions so that orders come together by table and the entire order can be served at one time; hot and in timely fashion. This person must communicate with both the wait staff expeditor and his own staff. In most cases this is the role of the kitchen manager.
GRILL ASSISTANT: aids grill man with correct bun set ups, compiles sandwich plates and platters, runner for high volume nights. From this position, the novice can learn by both observation and hands-on training.
PREP COOK: Much of the food quality and portion control is dependent on the job of the Prep cook. Prep cooks are required to work from the recipe book using measuring instruments, you must be able to read and understand English.
Prep respond to the immediate needs of the line and pre-prep for the next shift by using a prep sheet that is based on par levels. It is the prep cook’s responsibility to make sure that the line cooks have the correct amount of everything they need to prepare food quickly and efficiently.
Because Wild Wing Café prides itself in the quality of its house made foods, the Prep cook controls the quality of the majority of our product. Waste control, food rotation, and correct portioning can make the difference between profit and loss.
The efficiency of the entire kitchen also rests in this person’s shoulders. It is impossible for the line to keep up the pace necessary for high volume if the ingredients they need have to be prepared “on the fly”. Something as seemingly inconsequential as salad mix or shredded cheese can hold up an order and throw the line cooks off their pace.
Bartender Wild Wing Cafe-Fording Island Rd

Must have at least 2-3 years of experience as a bartender in high volume restaurant/bar and have completed a “safe alcohol service” program such as TIPS or BAR CODE. Complete knowledge of drink menu and food menu is a must. This is not a job for someone who is slow to react.
It is first and foremost the bartender’s job to get the customer a drink of his/her choice or be able to assist him in choosing from our extensive menu; this takes patience. Also, it is the bartender’s job to guide the customer throughout the menu, making suggestions whenever possible. Bartenders help “sell” Wild Wing Café, its food and “good time” atmosphere. Bartenders have legal obligations, which directly affect your livelihood. They are responsible for assuring that customers are of legal drinking age. They are charged with controlling their customer’s intake of alcohol in a professional and non-confrontational manner.
Bartenders may be called upon to handle TO GO food orders. They are also expected to perform a number of sidework tasks, including cleaning, replenishing coolers and stock, and some food prep. Some of these tasks are done weekly, others each shift. The work may be assigned by shift and or weekly. In addition to serving the customers seated at the bar, bartenders also provide alcoholic beverages for the dining room. This role, called Service Bartender, should be assigned to a proficient bartender who understands the demands of table service.

Expect in high volume times, the expeditor is expected to run food to the tables when the server is not available. Therefore he/she must be familiar with the table numbers and dining room layout. Before each shift, the Expeditor is expected to replenish all the condiments, dressings and garnish on his station. He/she is responsible for chopping parsley, bacon and green onions and slicing eggs for salads. At the close of the shift all items must be rotated into fresh containers, and stored in their correct place. Dirty containers must be taken to the dish area to be cleaned. A prep list of items that are needed for the next shift should be left for prep.

Your customers want their food as quickly as possible. Your expeditor wants the food out his window.
Your server is nowhere around. Who you gonna call? Food Runner.
This is an entry-level position and an integral stop along the server training journey. Knowledge of the menu and proper garnish is important. Proficient knowledge of floor layout and table numbers is a must.
The primary function of the food runner is to take food to the tables at the direction of the expediter. Although the food runner is not a server per se, he or she interacts with customers. He must have the same friendly outgoing quality that we expect from servers. The food runner must be able to identify the food to the customers as it is severed including flavors of wings on sample platters. He will also be asked by customers to bring napkins or setups that may be missing from the table. At times, he may be asked by the customer to take additional orders as he delivers the food. It is his responsibility to deliver what he can and take any additional requests to the server.
The food runner is a utility man on busy nights. Ho or she may be asked to assist the expeditor with garnish or cold appetizers and salads.
He is expected to bus tables as a routine part of this return trip to the kitchen.
