To accurately prepare and properly mix the various batters, icings, fillings and crusts used to create Sweet Street products. The major end results of the job are products that look and taste consistent with the standards established with the original formulas. This position is expected to be able to mix any of the formulas for the product line.
- Order necessary ingredients and in correct quantities as needed from scaling.
- Mix ingredients using machines, properly timing and monitoring for quality.
- Add ingredients in proper order and at the right time to produce expected results.
- Coordinate completion of mixed items with depositors.
- Spot check all scaled ingredients.
- Maintain clean and safe work area.
- Follow Standard Operating Procedures (SOP’s) and Good Manufacturing Practices (GMP’s).
- Prior manufacturing experience.
- Strong aptitude with numbers and measurements; must pass in-house math aptitude test.
- Ability to properly lift and carry up to 75 lbs. throughout shift.
- Excellent reading comprehension skills.
- Must be able to communicate in English (read, write and converse) in order to receive written and verbal job and safety instructions, comprehend hazardous material labeling, follow production schedule, and prepare graphs, weights and other production reports as required.

This position is responsible for performing all the activities pertaining to mixing ingredients for the production of food products; contributes to the team’s efforts in obtaining production efficiencies and follows methods and instructions when mixing ingredients. The employee must follow the Health and Safety and Food Safety programs, processes and procedures.
* Operates two of the following machines/equipment within the savory area: Mixers, stove, Likwifier, kettles, Hobart Mixers, Turbo Mixer, In Line Mixer, VCM and chopping machines and pallet jacks, as required. Uses tools as knives, calculators, brushes, thermometer and other kitchen utensils.
* Ensures consistency quality and coloring of the batches according to product specifications.
* Completes batch cards for every batch produced – records weights per batch and processes all batch cards at the end of the shift.
* Performs area housekeeping as required.
* Contributes to the team effort by accomplishing related tasks as directed.
* Management retains the discretion to add or change the duties of the position at any time
EDUCATION and/or EXPERIENCE
High school education preferred; or up to one year related experience or training in a manufacturing assembly environment; or equivalent combination of education and experience. Certificate in AIB preferred but not required.

Job Number: 17948 SUMMARY Under the general supervision of the Production Team Leader, is responsible for dough mixing, preparation, and supply to processing lines. ESSENTIAL DUTIES AND RESPONSIBILITIES include the following.
Other duties may be assigned due to business needs or special circumstances which may require reassignment to other departments or other job duties. Mixes dough according to specifications for distribution to extruder line: Reads daily production schedule and plans accordingly; prepares mix according to established formulations as specified; properly mixes ingredients; monitors correct dough temperature/dough moisture, makes adjustments accordingly; monitors proofing belt; removes any product that is improperly formed or overlapped.
Mixes ingredients according to specifications to make slurry to coat seasoned products: Reads daily production schedule and plans accordingly; prepares mix according to established formulations as specified; properly mixes ingredients; monitors correct coverage amount, makes adjustments accordingly. Monitors and operates Quality Control Lab Equipment associated with checking finished product characteristics (moisture, salt, slurry oil coverage, etc.). Monitors overall quality.
Prepares and maintains sufficient raw material levels (i.e. meal, yeast, sponge, sale, etc.). Distributes dough to extruders on a timely basis. Monitors extruded pretzel weights and makes adjustments, as necessary, to confirm to processing standards. Keeps dough carts free from excess dough scraps.
May relieve processing department personnel for breaks/lunch. Observes and maintains all safe operating procedures while working around machines and moving parts. Assists other personnel in performance of their duties.
Practices and adheres to appropriate safety and hygiene guidelines/procedures for safe housekeeping and personal protection; keeps work area clean; stores supplies in designated areas; keeps work area aisles/exits clear and free from obstructions; removes trash from work area floor; follows instructions for safe lifting/carrying of various sizes, shapes, and weights of objects; identifies/reports defective equipment; reports all job-related injuries to Production Team. Performs sanitation assignments and shutdown cleanup duties as scheduled. Performs other job-related projects, duties and assignments as directed by Production Team Leader.

Deliver concrete to our customers in a helpful, courteous and safe manner. Observe all of Graniterock policies and procedures. Maintain daily vehicle inspection reports, assuring that each vehicle is safe and well maintained. Assure product quality to the best of the Driver’s ability. Notify the Dispatcher of job site information and conditions. Maintain the appearance of the mixer truck. Work in the yard performing maintenance, cleaning and improvement duties as required. EXPERIENCE: Mixer Truck driving experience.

ESSENTIAL DUTIES AND RESPONSIBILITIES INCLUDE:
Checks the production area to ensure all equipment is in optimum working conditions.
Checks for any foreign material or objects that may prevent equipment from operating within guidelines. Reports problems immediately to Foreperson and Supervisor
Maintains accuracy in mixing time, water temperature, ingredient weight, and dough temperature
Prepares dough according to the production schedule, unless instructed otherwise by the Foreperson or Supervisor.
Records the sponge bench resting temperature, dough time after mixing, and any other necessary information on the production schedule.
Checks each dough for proper consistency before discharging it from the mixer. Notifies the Foreperson or Supervisor immediately if any dough is too soft, too tight, varies from standard temperature by more than two (2) degrees, or has any other unusual condition
Never attempts to troubleshoot dough without notifying the Foreperson or Supervisor.
Keeps all small ingredients pre-scaled ahead of time and in correct mixing sequence according to the Production schedule.
Follows dough-mixing procedures for each variety.
Does not rely on memory for mixing. Verifies that all ingredients are in the mixer by checking the formula card on each variety.
Never pre-scale ingredients more that 20 minutes before mixing.
Have dough troughs and dough pumps properly greased and clean of old dough before discharging fresh dough into them. Monitors the dough pump to ensure that air pockets do not develop.
Takes breaks and lunches as required.
Places all boxes and waste bags in the waste bin as soon as they are emptied. Break down all boxes prior to placing them in the waste bin.
Keeps ingredient containers covered when not in use.
Keeps workstation clean at all times. Performs sanitation duties and other duties as directed by the Foreperson.
Do not leave workstation at the end of your shift until the area is clean.
If production stops, do not finish mixing dough. Shut off mixer when be able to save the dough.
Make sure all guards are in place before operating
Keep hands away from sheeter rollers while they are running. Only adjust guides when sheeter rollers are turned off.
Keep flour clean, mop up oil spills, water spills and sweep up flour.
Keep your work area clean at all times, mop up any oil or water and sweep up all particles on the floor.
Never lift anything, which you feel is heavier than you can lift. Lift with your legs, not your back. Get assistance if necessary.
Report to the foreperson or supervisor, all equipment, which is in disrepair, so it can be repaired immediately.
Make sure area beneath trough hoist is clear when lowering dough troughs.
Get help in moving dough troughs if needed.
Verify operation conditions (Performance, temperature, and times) are correct during the process.
Check that product maintains best quality specifications
Direct personnel in sanitary and other duties as required, keeping the production area clean and organized during operations and at the end of the shift
Notify maintenance department and supervisor of any mechanical problems as needed (verbally and in writing)
Produces required wax batches in a timely, efficient, and accurate manner while maintaining accurate production and inventory records.
Successful candidates will be able to show increasing levels of responsibility in previous companies and positions of responsibility. Must be able to effectively communicate and support work history with resume and references in and one-on-one and group interview format.
