The Dough Mixer is responsible for operating mixing machine to mix ingredients together to make final product. Identify acceptable or unacceptable product quality per customer requirements both before and after product is mixed. Keep work area clean and organized.
Place raw ingredients into a mixer per designated formula and instructions.
Operate mixing machine controls to mix ingredients.
Places final product into troughs.
Perform required housekeeping to keep work areas clean such as scraping, sweeping and/or mopping floor, putting trash in trash containers, picking up product from floor.
Record ingredient usage and logs in accurate log numbers.
Place product or scrap into designated color-coded containers.
Visually identify quality or bad product before and after it is mixed. Removes unacceptable product.
Accurately use measuring equipment to weigh and measure ingredients.
Follow Good Manufacturing Practices (GMP's) at all times.
Verbally communicate instructions, problems, etc. to co-workers, supervisors and employees from all departments.
Clean inside and outside of mixer and utensils per established procedures.
Check schedule to see which dough is scheduled to run.
Select the correct mix sheet for the scheduled dough.
Select the correct ingredients for the scheduled dough and visually check for defects.
Accurately weigh the dough ingredients.
Check accuracy of scales, meters and thermometers.
Record all lot numbers before mixing dough; ensure that all lot numbers are on mix sheet at end of shift.
Records dough times, temperatures, ingredient usage and trough number.
Maintain correct dough or filling temperature.
Communicate all mix sheet changes to the next shift, per supervisor's instructions.
Contact supervisor immediately if dough or filling is not consistent with previous batches.
Responsible for location of thermometer, scraper and measuring cup at all times.

Description: At Bama, the General Production position is expected to understand, engage and participate in the production activities in their area or position. Directly responsible for making a high quality, safe product; while minimizing scrap, meeting customer expectations, and ensuring a safe work environment and practices.
Duties: Set up, monitor and adjust to compliance the automated machinery.
Measure, weigh, and record raw product data and transfer data to the SPC sheet to ensure product is consistent by all specs.
Perform routine equipment repairs and assist maintenance with in-depth repairs/modifications.

Pizza Dough Prep
Preparation of pizza dough and breadtwist for a high volume restaurant. Ability to work weekends including Sundays a must.
Minimum 2+ Years experience in full service dine in restaurants. This is an early morning (8AM-4PM) position 5 days a week, weekends a must. Days off will be early/mid week.
Organize and prioritize preparation of food items.
Prepare food according to standardized recipes

Production Line Operator / Mixer
New French Bakery is seeking qualified Production Line Operators and Mixers for our bakery manufacturing environment. We run a fast-paced production plant in Minneapolis which produces over 60,000 pounds of bread daily.
As a Mixer, you will be responsible for mixing and monitoring ingredients to ensure products are mixed within specifications to produce quality bread products. As a Machine Operator, you will be responsible for keeping the production line running, monitoring bread quality and contacting maintenance for assistance if needed.
Verify ingredients on the formula sheets as you scale.
Accurately follow the formula/recipe sheets.
Record the time and temperature of dough on the mixing control sheet.
Rotate and use re-work dough as necessary.
Thoroughly clean mixers according to CIP procedures.

Under the general supervision of the Production Team Leader, is responsible for dough mixing, preparation, and supply to processing lines.
ESSENTIAL DUTIES AND RESPONSIBILITIES include the following. Other duties may be assigned due to business needs or special circumstances which may require reassignment to other departments or other job duties.
Mixes dough according to specifications for distribution to extruder line: Reads daily production schedule and plans accordingly; prepares mix according to established formulations as specified; properly mixes ingredients; monitors correct dough temperature/dough moisture, makes adjustments accordingly; monitors proofing belt; removes any product that is improperly formed or overlapped.
Mixes ingredients according to specifications to make slurry to coat seasoned products: Reads daily production schedule and plans accordingly; prepares mix according to established formulations as specified; properly mixes ingredients; monitors correct coverage amount, makes adjustments accordingly.
Monitors and operates Quality Control Lab Equipment associated with checking finished product characteristics (moisture, salt, slurry oil coverage, etc.). Monitors overall quality.
Prepares and maintains sufficient raw material levels (i.e. meal, yeast, sponge, sale, etc.).
Distributes dough to extruders on a timely basis.
Monitors extruded pretzel weights and makes adjustments, as necessary, to confirm to processing standards.
Keeps dough carts free from excess dough scraps.
May relieve processing department personnel for breaks/lunch.
Observes and maintains all safe operating procedures while working around machines and moving parts.
Assists other personnel in performance of their duties.
