Manager - Restaurant Manager
The Assistant Manager implements and maintains operations to improve efficiencies, cost effectiveness, and exceptional customer service. Collaboration with team members and campus community to bring enhancements to restaurants and cafes. Incumbent will be an innovative thinker who brings forward new opportunities for customers. Responsibilities include unit management and supervision of staff, counseling, training and development; budget and operations; food inventory and customer satisfaction. This position provides day to day management of one or more operations as assigned. Individual units operate varying hours that can include breakfast, lunch, dinner and late night meal service from 7am to 2am seven days a week. This position is part of a team of managers who provide supervision and leadership to various units with a strong emphasis on teamwork, customer service and culinary excellence. Incumbent will understand trends within the marketplace to include concept and menu development. Assists in the training of the staff. Previous food service and supervisory experience required. Flexibility with work schedule is needed.
Daily Operations Perform as Expected
A. Identifies daily labor requirements and develops a schedule. Ensures coverage of openings based on unexpected absences, vacations, etc.
B. Assists with ensuring that proper production techniques are followed in regard to, portioning techniques, use of leftovers, etc.
C. Oversees the service of meals to insure that the quality, portioning and procedures are correct.
D. Leads the inventory process to ensure products are available as needed and meet quality and safety criteria. Determines when products should be wasted.
E. Ensures that all food production processes, dining room services, and sanitation practices meet all safety regulations.
F. Oversees the stock clerks in ensuring all equipment and product needed including paper supplies, food, beverages, cleaning products, equipment and dishware.
G. Implements promotions by ensuring marketing materials are developed, in place, and are designed to interest customers in those products.

Safe Food Service Environment
A. Maintains and inspects food receiving, preparation, production and storage areas to ensure regulations and good production practices are adhered to.
B. Maintains a safe, secure, and healthy work environment by establishing, following, and enforcing sanitation and quality of food and beverage preparation and service standards and procedures; enforcing sanitation and legal regulations of all kitchens and service areas.
Two year degree in food service, hospitality or culinary management or culinary arts or equivalent education and experience. Previous managerial experience in Dining Services management including but not limited to: purchasing, supervision, merchandising and marketing. Experience in a college or educational environment preferred.
Experience in concept development and trend analysis.
Direct supervision responsibility, including performance assessments, of more than 10 employees. Demonstrated ability to effectively motivate, supervise and evaluate professional and union staff.
Certificates & Licenses:
Serv Safe within 6 months of employment.
· BasicMicrosoft Word skills as evidenced by the ability to produce basic business letters and simple tables and charts; as well as check spelling, set tabs, change page orientation, sort, save, open and organize electronic files.
