2.Manage operations of the kitchen, which includes daily decision-making, flexibility, staff support, guest interaction, scheduling and effective planning while upholding standards, product quality and cleanliness. 5.Maintain, control and train staff on food cost by properly ordering and receiving products.
6.Maintain appropriate staffing pars by actively tracking labor and maintaining the budgeted staffing expectations.
7.Utilize product mix as a tool to minimize waste and establish accurate pars.
8.Prepare and coach staff on daily prep lists, using proper inventory practices.
9.Actively participate in menu roll-outs, including planning necessary item rotation, depletion and additions.
10. Train staff on the proper preparation and guidelines for new menu and special items.
11. Ensure product consistency through constant recipe adherence, line checks and appropriate portion control.
12. Consistently review tickets times ensuring all food is promptly made and delivered.
13. Maintain appropriate small ware supplies, ordering practices and utilizes declining budgets.
14. Interview and hire kitchen staff according to Jo's standards, staying ahead of the seasonal needs by planning appropriately.
15. Conduct thorough line checks in a timely manner, utilizing line checks as a coaching tool for staff members.
16. Responsible for staff scheduling, using forecasting and labor performance tools. Post and communicates schedules in a timely manner. Cross-train the staff to aid in the scheduling process.
17. Maintain the kitchen communications board and verifies staff knowledge and understanding of the information provided.
18. Conduct kitchen meetings when necessary, shift meetings every day and keeps staff informed on new developments and upcoming events.
19. Ensure all staff members adhere to Jo's uniform standards.
20. Ensure a safe working and guest experience environment to reduce the risk of incident, injury and food handling related issues.
21. Ensure proper security procedures are in place to protect staff members, guests and company assets. This includes security of all storage rooms and products.
22. Ensure immediate response is given to any and all guest comments and concerns and inform immediate supervisor of concerns and assist implementing corrective measure when necessary
Education & Experience:
1.High School diploma or general education degree (GED)

Job Description Summary:
Supervision of all kitchen activity on a daily basis. Responsible for managing the maintenance, set-up, food production and quality control of all meat, fish, fowl and other food items prepared in the kitchen for all Food and Beverage Outlets.
High school graduate or equivalent. Culinary school graduate.
Three years culinary training. Three to five years culinary experience in a multi level hotel or conference center. Supervisory experience.
