The Machine Operator is responsible for all aspects of machine operation and changeover activities to achieve and maintain world class quality. Follow process orders from beginning to end and record all pertinent information. Individual will add materials at specified quantities and times, observe temperatures and or mixtures and chemical reactions, record necessary batch information, and take, conduct and record samples at designated times to ensure timely, consistent, quality batches. Mixer will operate forklift and other material handling equipment.
Participate in confined space entry pot cleaning activities, which include use of body harness and extraction system. Mixing position will participate in determining and implementing corrective actions. Must be able to wear all required PPE including air purified respirators.

Production Line Operator / Mixer
New French Bakery is seeking qualified Production Line Operators and Mixers for our bakery manufacturing environment. We run a fast-paced production plant in Minneapolis which produces over 60,000 pounds of bread daily.
As a Mixer, you will be responsible for mixing and monitoring ingredients to ensure products are mixed within specifications to produce quality bread products. As a Machine Operator, you will be responsible for keeping the production line running, monitoring bread quality and contacting maintenance for assistance if needed.
Verify ingredients on the formula sheets as you scale.
Accurately follow the formula/recipe sheets.
Record the time and temperature of dough on the mixing control sheet.
Rotate and use re-work dough as necessary.
Thoroughly clean mixers according to CIP procedures.
Follow mixing schedules for preferments, liquid levain, poolish and sourdough.
Monitor equipment, verify dough on the production line, record weights.

8.Notifies Supervisor of dough not meeting mixing standards and of equipment malfunctions for the mixing equipment and scaling equipment.
9.Maintains log sheets as necessary that are required for Quality Assurance.
10. Transports rework dough to the mixing area.
11. Adds rework dough to the mixers at the appropriate rate.
12. Scales hand add ingredients into buckets. Adds the hand add ingredients to the blender when needed.
13. Maintains work area in clean and sanitary condition by sweeping floor and wiping down equipment.
14. Assists in training of new employees or employees who change job classifications.
15. Maintain a high level of sanitation and GMP’s.
16. Complete tasks and projects as required by the company.

Mixes dough according to specifications for distribution to extruder line: Reads daily production schedule and plans accordingly; prepares mix according to established formulations as specified; properly mixes ingredients; monitors correct dough temperature/dough moisture, makes adjustments accordingly; monitors proofing belt; removes any product that is improperly formed or overlapped.

Monitors and operates Quality Control Lab Equipment associated with checking finished product characteristics (moisture, salt, slurry oil coverage, etc.). Monitors overall quality.
Prepares and maintains sufficient raw material levels (i.e. meal, yeast, sponge, sale, etc.).
Distributes dough to extruders on a timely basis.
Monitors extruded pretzel weights and makes adjustments, as necessary, to confirm to processing standards.
